Ingredients
- 1 cup unsalted butter softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 ¼ cups all-purpose flour
- 1 cup finely chopped pecans
- ¼ tsp salt
- ⅓ cup powdered sugar plus more for rolling
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, beat the softened butter, ½ cup powdered sugar, and vanilla until smooth and creamy.
- Slowly add the flour, chopped pecans, and salt. Stir until the dough comes together.
- Roll the dough into small balls about the size of a walnut.
- Place them on an ungreased baking sheet, spacing them about 2 inches apart.
- Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale.
- Let the cookies sit on the baking sheet for a couple minutes, then transfer to a wire rack.
- While still warm, roll the cookies in ⅓ cup powdered sugar to coat.
- Once fully cooled, roll them in powdered sugar again for that perfect snowy finish.
Notes
- Don’t overbake—these cookies are better slightly underdone for that soft, buttery texture.
- For a festive twist, mix crushed candy canes into the powdered sugar before the final roll!
