These baked Greek lemon chicken thighs are amazing! So easy to make, healthy and delicious! Marinate chicken thighs in lemon juice, yogurt, minced garlic and herbs and bake to perfection, so yummy!
Put olive oil, lemon juice, Greek yogurt, minced garlic, Italian seasoning, salt and pepper in a bowl and mix until combined.
Add chicken thighs to the marinade and toss to coat. Marinate for 30 minutes on the counter, or in a refrigerator overnight. If you don't have time to marinate, just skip it :)
Preheat the oven to 425F. Line a baking sheet with parchment paper.
Put chicken thighs on a baking sheet in a single layer. Put in the oven and bake for 30 minutes.
