This Instant Pot Brisket is amazing! So easy to make, juicy, tender and mouthwatering! Once you cook brisket in the Instant Pot, you'll never make it any other way!
Rub the brisket with salt, chili powder and liquid smoke (if using).
Put water in the Instant Pot, then put the brisket in the Instant Pot on a trivet.
Close the Instant Pot lid and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 70 minutes on High pressure.
When it's done cooking, unplug the Instant Pot from the outlet and let the pressure release naturally (NR) for 20 minutes, then quick release (QR) the remaining steam.
Preheat the oven to Broil.
Remove the brisket from the Instant Pot and put on a baking sheet. Broil for 5 minutes, or until the top is browned.
For serving, slice the brisket into thin slices across the grain. Serve with BBQ sauce.

If making brisket ahead, put the slices of cooked brisket in a baking dish. Mix the cooking liquid from the Instant Pot with 1 cup of barbecue sauce and pour it over sliced brisket.
