This flavorful One-Pan Orecchiette Pasta is the perfect weeknight meal when you’re craving something quick, easy, and incredibly satisfying. With just a handful of ingredients, minimal prep, and only one pan to clean, this dish will quickly become a family favorite. The combination of spicy Italian sausage, tender orecchiette pasta, fresh arugula, and rich Parmesan creates an unforgettable flavor that’s sure to impress.
In a large, deep skillet, heat the olive oil over medium heat. Add the diced onion and a pinch of salt, then sauté for about 5 minutes, until the onion softens and becomes translucent.
Add the sausage to the pan, breaking it apart with a spoon. Cook for 5–7 minutes, stirring occasionally, until the sausage is browned and fully cooked through.
Pour in 1 ½ cups of chicken broth, using a wooden spoon to scrape up any flavorful browned bits from the bottom of the pan. Bring the mixture to a boil.
Stir in the orecchiette pasta, ensuring it's evenly coated in the broth. As the liquid is absorbed, gradually add the remaining chicken broth, continuing to cook and stir for about 15 minutes, or until the pasta is tender and the broth is mostly absorbed.
Add the chopped arugula and stir it into the pasta. Cook for another 1–2 minutes, just until the arugula wilts.
Remove the skillet from the heat. Plate the pasta, topping it with a generous sprinkle of grated Parmigiano-Reggiano cheese.
Notes
If you prefer a milder flavor, you can substitute the spicy sausage with a regular Italian sausage or chicken sausage.
