Preheat oven to 400°F and butter a 9x13-inch baking dish.
Roll out the pie pastry into a large rectangle, about 24x16 inches. Cut into six 8-inch squares.
Place one peeled and cored apple in the center of each pastry square.
Cut the butter into 8 pieces. Place one piece inside each apple, and set the remaining butter aside for the sauce.
Fill each apple with brown sugar and sprinkle any leftover sugar around the base of the apple. Sprinkle cinnamon and nutmeg over the tops.
Dampen your fingers with water, then fold the pastry corners up to cover each apple completely. Pinch the edges to seal.
Arrange the wrapped apples in the prepared baking dish.
In a saucepan, combine water, white sugar, vanilla extract, and the remaining butter. Bring to a boil, then reduce heat and simmer until the sugar is dissolved (about 5 minutes).
Carefully pour the sauce over the apple dumplings in the pan.
Bake for 50 to 60 minutes, or until the pastry is golden brown and crisp.

You can swap out Granny Smith apples for Honeycrisp or Gala if you prefer a sweeter taste.
