Ingredients

  • 10 lb fully cooked bone-in ham
  • 1 ¼ cups packed dark brown sugar
  • ⅓ cup pineapple juice
  • ⅓ cup honey plus extra to taste
  • ⅓ large orange zest and juice
  • 2 tbsp Dijon mustard
  • ¼ tsp ground cloves
  • 1 ½ tsp lemon juice optional, to taste

Instructions

  • Preheat the oven to 325°F. Place the ham on a rack inside a roasting pan.
  • Bake uncovered for 2 hours.
  • While the ham is baking, make the glaze. In a small saucepan, combine brown sugar, pineapple juice, and honey.
  • Zest the orange into the pan, then squeeze in its juice. Add Dijon mustard and ground cloves.
  • Heat over medium-high until the glaze starts to boil. Lower heat and simmer for 5–10 minutes until slightly thickened.
  • Taste and adjust the glaze. Add lemon juice if you want more tang, or more honey for extra sweetness.
  • After 2 hours, remove ham from the oven. Brush the glaze over the ham generously.
  • Return to the oven and bake for 30 to 45 more minutes, brushing with glaze every 10 minutes.
  • Once the ham is golden and caramelized, remove from oven and serve hot. Enjoy!

Notes

  • Make sure to taste the glaze before brushing—it’s easy to adjust the sweet or tangy flavors to your liking.
  • Leftovers are amazing! Use them in sandwiches, omelets, or diced up in salads.
