Season the shrimp with 1 teaspoon smoked paprika, Italian seasoning, ¼ teaspoon salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat, then add the shrimp and minced garlic.
Cook the shrimp for about 2 minutes per side, until pink. Do not overcrowd the skillet. Cook in batches if needed.
Remove the shrimp from the skillet and place it on a plate.
Add the chopped sun-dried tomatoes and artichoke hearts to the same skillet, then cook for 1 minute, stirring often.
Add the spinach and cook for a few minutes, until wilted.
Pour in the heavy cream, then stir in the remaining ¼ teaspoon smoked paprika and remaining ¼ teaspoon salt. Bring to a gentle simmer and cook for about 1 minute.
Return the shrimp to the skillet, spoon the creamy Tuscan sauce over the shrimp, and simmer for about 2 minutes until heated through and fully cooked.
Notes
Use raw shrimp for the best texture. Pre-cooked shrimp can become rubbery if cooked too long.
This dish is best served right away while the sauce is creamy and the shrimp are tender.
