- 4 grouper fillets about 6 oz each, skin removed
- 1 cup full-fat coconut milk
- 1 small onion finely diced
- 2 garlic cloves minced
- 1 tbsp fresh ginger grated
- 1 red chili thinly sliced
- 1 tbsp vegetable oil or coconut oil
- 2 tbsp lime juice
- 1 tsp brown sugar
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper or to taste
- 2 tbsp fresh cilantro chopped, for garnish
- 1 tbsp fish sauce optional
Instructions
- Prepare all ingredients. Dice the onion, mince the garlic, grate the ginger, and slice the chili.
- Heat oil in a large skillet over medium heat.
- Add onion and cook until softened, about 3 minutes.
- Stir in garlic, ginger, and chili. Cook for 1 minute until fragrant.
- Pour in coconut milk, lime juice, and brown sugar. Stir to combine.
- Season with salt, pepper, and fish sauce if using. Let the sauce gently simmer on low heat.
- Pat the grouper fillets dry and season with salt and pepper.
- Heat oil in a separate pan over medium-high heat.
- Cook the fish for 3–4 minutes per side, until opaque and flaky.
- Transfer the cooked fish into the coconut sauce and let it warm together briefly.
- Spoon sauce over the fish and garnish with chopped cilantro before serving.
