Instructions
Wash the strawberries, remove any spoiled berries, cut off the stems, and chop the strawberries into small pieces.
Add the chopped strawberries to a large cooking pot with the sugar, lemon juice, and squeezed lemon halves.
Stir everything together, place the pot on the stove, and bring the mixture to a rolling boil.
Reduce the heat and simmer the jam for 30 minutes or longer, stirring occasionally, until it thickens.
Check if the jam is ready with a candy thermometer. It should reach 220°F or 105°C. You can also place a small spoonful on a frozen plate; if it does not run, the jam is ready.
Remove the lemon halves and blend the jam with a hand blender until smooth, or leave it a little chunky if desired.
Pour the hot jam into clean sterilized jars, filling them close to the top, then close the jars tightly with lids.
Turn the jars upside down and let them sit until the next day, then label and store in a cool, dry place. Once opened, keep in the refrigerator.
Notes
Do not reduce the sugar, as it helps the jam set and preserve properly.
The lemon juice and lemon halves help the jam thicken naturally without added pectin.
