Spinach Feta Pinwheels

Ingredients

  • 1 egg
  • 1 tbsp water
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mozzarella cheese grated
  • 1 green onion chopped
  • 1/2 tsp garlic salt
  • Fresh nutmeg A few grates
  • 1 package spinach frozen chopped, 10 ounces, thawed and squeezed very dry
  • 1 sheet frozen puff pastry thawed
  • 1 tbsp all-purpose flour for rolling

Instructions

  • Add the egg and water to a small bowl. Whisk until combined to make the egg wash.
  • Place the feta, mozzarella, green onion, garlic salt, and nutmeg in a mixing bowl. Stir until evenly combined.
  • Sprinkle the flour over a clean work surface. Place the thawed puff pastry on the flour and roll it out just enough to flatten the seams.
  • Brush the puff pastry with the egg wash. Spread the cheese mixture over the pastry, then break apart the spinach and distribute it evenly on top.
  • Leave about 1 inch of uncovered pastry along one short edge. Starting at the opposite short edge, tightly roll the pastry into a log.
  • Line two baking sheets with parchment paper. Cut the pastry log into 16 slices, each about 1/2 to 3/4 inch thick, and place them on the baking sheets.
  • Refrigerate or freeze the pinwheels while the oven heats to 400°F. Once heated, reduce the oven temperature to 350°F.
  • Bake the pinwheels for 15 to 18 minutes, or until puffed and golden brown. Let them cool slightly before serving.

Notes

  • Squeeze as much liquid as possible from the spinach to keep the pinwheels from becoming soggy.
  • Keep the sliced pinwheels cold until baking so the puff pastry rises and becomes flaky.
