Instructions
Heat the olive oil in a large sauté pan over medium heat. Add the red bell pepper, serrano or jalapeño pepper, carrots, potato if using, and garlic, then cook for 2 to 3 minutes, stirring occasionally.
Add the tomato paste, sweet paprika, hot paprika, coarse salt, cumin, and turmeric. Stir to coat the vegetables in the spices and cook for another 2 to 3 minutes.
Add half of the chopped cilantro and 3/4 cup of water. Stir, cover, and cook for 12 to 15 minutes, or until the vegetables are tender.
Taste the sauce and adjust the salt or spice level if needed. Lightly season the salmon fillets with salt.
Place the salmon into the pan, nestling it into the sauce. Spoon the sauce over the fish so it is well coated, adding up to 1/4 cup more water if you want more sauce.
Sprinkle the remaining cilantro over the top, cover the pan, and reduce the heat to low.
Cook for 20 to 25 minutes, spooning the sauce over the fish halfway through cooking.
Serve hot with 4 lemon slices and 1 tablespoon fresh lemon juice squeezed over the top.
Notes
You can use another firm fish instead of salmon, such as cod, halibut, or sea bass.
For a milder dish, use less hot paprika or swap the serrano pepper for a mild pepper.
