Heat 1 tbsp of oil in a large non-stick frying pan over medium-high heat. Add the broccoli and cook, covered, for 2 minutes.
Add another 1 tbsp of oil, soy sauce, minced garlic, black pepper, cauliflower rice and cooked chicken. Cook, stirring occasionally, for 5 minutes, or until cauliflower rice is cooked.
Add the eggs and stir to combine. Cook, stirring, for 1 minute.
