Add olive oil to skillet and turn heat to high. Season the salmon with salt and pepper. Once the oil starts sizzling, you'll know that the pan is ready to cook the salmon.
Turn down the heat and add the fish to the skillet. Cook salmon for 4 minutes, then flip the fish and cook for another 4 minutes. You can reduce the heat further at any time, if need be.
At this point, the sides of the salmon should look cooked. Check doneness with a meat thermometer. It should register at least 145 degrees if the fish is done. If not, cook the salmon for a bit longer until the temperature reaches 145 degrees.
Now turn off the heat and use a spatula to move the fish to a serving plate.
