Instructions
Heat olive oil in a large pot over medium-high heat. Add chicken, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon pepper. Cook until browned on all sides.
Add onions, carrots, celery, sundried tomatoes, and garlic. Cook until softened.
Sprinkle in the flour and stir well to coat. Stir in tomato paste if using.
Slowly pour in chicken broth while stirring to keep the mixture smooth.
Bring to a boil, then add pasta, remaining Italian seasoning, remaining salt and pepper. Reduce heat, cover, and simmer for about 20 minutes.
Stir in heavy cream, spinach, and Parmesan cheese. Simmer for a few more minutes until creamy and heated through.
Taste and adjust seasoning if needed before serving.
Notes
Start with 6 cups of broth for a thick, creamy soup. Add more broth if you want a thinner consistency.
