1/2 cup unsalted butter
4 oz white chocolate bar
3/4 cup granulated sugar
2 tbsp lemon zest
2 large eggs room temperature
1 large egg yolk room temperature
1 tsp lemon extract
1 tsp vanilla extract
1 cup + 2 tbsp cup all-purpose flour
1/2 tsp salt
1/8 tsp baking powder
2 tbsp fresh lemon juice
1 cup powdered sugar
2 tbsp fresh lemon juice for glaze
1/2 lemon thinly sliced, optional toppings
1 tsp lemon zest optional toppings

Instructions

Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper.
Melt butter and white chocolate in a microwave-safe bowl, stirring until smooth, then let cool slightly.
In a large bowl, rub together sugar and lemon zest, then whisk in eggs, egg yolk, lemon extract, and vanilla extract until smooth.
Add the melted butter and white chocolate mixture and mix until combined.
Stir in flour, salt, and baking powder, then add lemon juice and mix gently until just combined.
Pour the batter into the prepared pan and spread evenly.
Bake for 25–30 minutes until set and a toothpick inserted shows a few moist crumbs, then cool completely.
Mix powdered sugar with lemon juice to make the glaze, spread over cooled brownies, add toppings, then slice and serve.

Notes

Rubbing the lemon zest into the sugar helps bring out a stronger lemon flavor.
Let the brownies cool completely before adding glaze so it sets nicely.
