Hungarian Chicken Paprikash

Ingredients
- 1 kg chicken thighs and drumsticks
- 2 tbsp butter
- 1 medium onion chopped
- 3 cloves garlic minced
- 3 tbsp sweet Hungarian paprika
- ½ tsp smoked paprika optional
- 2 cups chicken broth or 2.5 cups
- 1 tsp salt
- ½ tsp black pepper
- ¾ cup sour cream
- 1.5 tbsp flour
- 1 tbsp water
- 2 tbsp fresh parsley chopped for garnish
Instructions
- Pat the chicken dry and season with salt and pepper.
- Heat 1 tablespoon butter in a large skillet. Sear chicken thighs and drumsticks in batches until browned, then remove.
- Add remaining butter, then cook onion and garlic until softened. Reduce heat and stir in paprika.
- Pour in chicken broth, stir, and return chicken to the skillet skin-side up.
- Cover and simmer for 10 minutes, then uncover and cook for another 20 minutes until chicken is done.
- Remove chicken and keep warm.
- Mix sour cream, flour, and water until smooth, then stir into the sauce and simmer until thickened.
- Return chicken to the sauce, spoon sauce over the top, and garnish with chopped parsley before serving.
Notes
- Always add paprika on low heat to prevent burning and bitterness.
- Adjust broth amount depending on how much sauce you prefer.
