Preheat the oven to 400°F. Position an oven rack in the center.
Melt the butter in a large ovenproof skillet or braising pan over medium heat.
Add the garlic and anchovies. Cook for 1 to 2 minutes, stirring and breaking up the anchovies as they cook.
Pour in the white wine and cook for about 4 minutes, or until it has reduced slightly.
Add the crushed tomatoes, oregano, and thyme. Bring the sauce to a simmer.
Cook the sauce for about 10 minutes, stirring occasionally, until the tomatoes break down and the sauce begins to thicken.
Stir in the olives and capers.
Season the fish with the sea salt, then carefully nestle the pieces into the sauce.
Transfer the skillet to the oven and bake for 8 to 10 minutes, or until the fish is opaque and flakes easily with a fork.
Divide the fish among 4 plates and spoon the puttanesca sauce over each serving. Top with fresh basil leaves or parsley and red pepper flakes, if desired.
Notes
If the fish pieces are thicker than 1 inch, turn them over halfway through baking and begin checking for doneness after 8 minutes.
Cooking time can vary depending on the type and thickness of the fish, so remove it from the oven once it is opaque and flakes easily.
