This Eggless Caramel Pudding is a creamy microwave dessert with a soft, wobbly texture and sweet caramel topping. It is made with simple ingredients and does not need eggs, baking, or steaming. This easy caramel custard-style pudding is perfect for a quick make-ahead dessert.
Add the sugar and water for the caramel to a microwave-safe ramekin and microwave on regular heating mode for 3 minutes, checking after 2 minutes and stirring if needed, until golden brown.
Set the caramel aside while you make the pudding mixture.
In a microwave-safe bowl, combine the milk, sugar, and custard powder.
Whisk until smooth and lump-free.
Microwave the pudding mixture on regular heating mode for 4 minutes, stopping to stir after each minute so it stays smooth and does not burn.
Pour the hot custard mixture over the caramel in the ramekin.
Refrigerate for at least 4 hours, or until fully set.
To unmold, place a plate on top of the ramekin, quickly flip it over, and carefully release the pudding onto the plate.
Notes
Watch the caramel closely after 2 minutes so it becomes golden brown without burning.
Stir the custard after each minute in the microwave for the smoothest texture.
