Instructions
Preheat the oven to 325°F. Spread the nuts in a single layer on a rimmed baking sheet and bake for 5 to 8 minutes, or until lightly browned and fragrant.
Line an 8-inch square baking pan with parchment paper. Place the toasted nuts and puffed rice cereal in a large mixing bowl and stir to combine.
Put the brown rice syrup in a microwave-safe bowl and microwave for 30 seconds. Whisk in the vanilla extract and 1/2 teaspoon sea salt.
Pour the syrup mixture over the nuts and puffed rice. Stir until everything is evenly coated, then transfer the mixture to the prepared pan and press it firmly into an even layer.
Bake for 18 to 20 minutes. Let the nut mixture cool in the pan for about 30 minutes.
Lift the mixture out of the pan and place it on a cutting board. Cut it in half lengthwise, then cut each half into 5 or 6 bars. Let the bars cool completely.
Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until the chocolate is smooth and melted.
Dip the bottom of each bar into the melted chocolate and place it on a parchment-lined baking sheet. Drizzle the remaining chocolate over the bars, sprinkle with 1/4 teaspoon flaky sea salt, and refrigerate until the chocolate is firm.
Notes
Honey can replace the brown rice syrup, but the finished bars may be softer and stickier.
Store the bars in an airtight container with parchment paper between the layers for up to one week.
