This cranberry pecan cheese log is a delicious and easy appetizer that's perfect for holidays, parties, and family gatherings. It's made with creamy cheese, sharp cheddar, sweet dried cranberries, crunchy pecans, and fresh chives for an amazing combination of flavors and textures. With just 5 simple ingredients and no cooking required, this festive cheese log is perfect for serving with your favorite crackers.
Add the chopped dried cranberries, pecans, and chives to a small mixing bowl. Stir everything together until evenly combined.
Place the cream cheese and shredded cheddar cheese in a large mixing bowl. Add half of the cranberry and pecan mixture, reserving the remaining half for the outside of the cheese log.
Stir everything together with a spatula until all the ingredients are evenly distributed throughout the cheese.
Transfer the cheese mixture onto a large piece of plastic wrap. Use the plastic wrap to shape the mixture into a log, then wrap it tightly to help it hold its shape.
Refrigerate the wrapped cheese log for about 1 hour to firm it up. If the cheese mixture is already firm enough, you can skip this step.
When ready to serve, spread the reserved cranberry and pecan mixture onto a cutting board.
Unwrap the cheese log, roll it in the remaining cranberry pecan mixture to coat, and serve on a board.
Notes
You can substitute walnuts or pistachios for the pecans if you prefer.
For easier slicing, refrigerate the cheese log for at least 1 hour before serving.
