This Chipotle Garlic Sauce with Sour Cream is creamy, smoky, tangy, and packed with bold flavor. Chipotle peppers in adobo, fresh garlic, lime juice, and warm spices blend with sour cream and mayonnaise for a smooth homemade sauce. Serve this easy chipotle sauce with tacos, burgers, grilled meats, roasted vegetables, burrito bowls, fries, chips, or fresh veggies.
Add the sour cream, mayonnaise, chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, cumin, and salt to a blender or food processor.
Blend for about 30 to 60 seconds, or until the chipotle sauce is completely smooth and creamy.
Taste the sauce and adjust it if desired. Add another half of a chipotle pepper or a little more adobo sauce for extra heat. Add more sour cream if you want to make the sauce milder.
Adjust the salt or lime juice to taste.
If the sauce is thicker than you like, add the optional olive oil or a teaspoon of water. Blend briefly again until it reaches your desired consistency.
Transfer the chipotle garlic sauce to a glass jar or airtight container.
For the best flavor, chill the sauce in the refrigerator for at least 30 minutes before serving.
Notes
For a milder garlic flavor, place the garlic in a dry skillet over medium heat.
Cook for about 5 minutes, or until the garlic is golden and soft.
