You'll love this hearty Chili Soup for a super flavorful dinner that's so easy to prep. And it's a complete meal in a pot! Everyone in the family will enjoy this warm, filling soup.
15 ozblack beansor navy bean or chili beans (drained)
12ozfrozen vegetables
15 ozsalsa
4cupswater
Instructions
Set a frying pan to high heat and add the ground beef. Wait until it starts to sizzle, then turn down the heat to medium-high. Break up the beef into crumbles, using a spatula. Then cook for 5 minutes (stirring every minute) until meat is browned and cooked through.
Turn off the heat and season the beef with salt. Stir to incorporate.
Move the ground beef to a soup pot. Use a slotted spoon to leave as much of the cooking grease behind as possible.
To the pot, add the can of beans, frozen vegetables, salsa, and four cups of water. Stir to mix it up.
Turn the heat on high. Once the soup starts boiling, turn the heat down to a simmer (low). Cook for 15 minutes, then turn off heat.
Check to see if soup needs more seasonings. If it's ready, move pot off of heat and ladle soup into bowls for serving.

Notes
This recipe calls for just salt to be added, since the salsa is very flavorful. However, feel free to add any seasonings you love in chili
If you use lean ground beef, there will not be much grease left behind in the frying pan
No need to defrost the frozen vegetables, just add them right into the pot
