Instructions
Bring a large pot of salted water to a boil.
Add the pasta and cook until al dente, following the package directions.
While the pasta cooks, add the diced tomatoes, red onion, fresh basil, garlic, oregano, salt, pepper, and 3 tablespoons of olive oil to a medium mixing bowl.
Stir the bruschetta mixture until combined, then let it sit for 10 to 15 minutes so the flavors can blend.
Drain the cooked pasta and transfer it to a large serving bowl.
Drizzle the pasta with the remaining 2 tablespoons of olive oil and toss to coat.
Add the bruschetta mixture to the pasta and toss until everything is evenly combined.
Drizzle with balsamic glaze, then top with extra basil and your choice of optional cheese before serving.
Notes
For the best flavor, let the tomato mixture sit for at least 10 minutes before adding it to the pasta.
This pasta salad is best served fresh, since the pasta will soak up the tomato juices as it sits.
