Preheat the oven to 350°F. Line a baking sheet with parchment paper for easy cleanup.
Cut the bacon slices into thirds.
Wrap each little smokie with a piece of bacon and secure with a toothpick or thread several onto a wooden skewer.
Arrange the wrapped smokies in a single layer on the prepared baking sheet.
Sprinkle brown sugar generously over the top of each piece.
Bake for 20 to 25 minutes, turning halfway through, until the bacon is crispy and the brown sugar has melted and caramelized.
Remove from the oven and let rest for 5 minutes so the glaze thickens slightly as it cools.
Notes
You can use an air fryer instead of the oven. Cook at 375°F for about 10 to 12 minutes, turning halfway through, until the bacon is crispy and the sugar is caramelized.
Let the smokies rest before serving so the glaze sets and doesn’t slide off.
