Avocado Rice
This Avocado Rice is dish is healthy and delicious. Add a squeeze of lime and a sprinkle of fresh cilantro for an easy rice side dish that's bursting with flavor.

Ingredients

avocado
pit removed
1
oz
lime juice
1 lime
1/3
cup
cilantro
(or to taste) chopped
2
cups
cooked white rice
or brown
Instructions
Wash the avocado and the lime. Slice avocado in half and remove the pit.
Scoop out both halves of the avocado flesh into a bowl. Use a fork to mash it up. Note: it doesn't have to perfectly smooth.
Slice the lime and squeeze all the juice into the bowl. Stir the juice and the avocado together.
Add in the cooked rice. Toss in chopped cilantro. Stir to mix.
Scoop rice mixture into a serving bowl. Add salt and pepper if desired.

Notes
You can use brown or white rice with this recipe, the instructions are the same
While preparing the rice, you have the option to add salt to the water, for additional seasoning
Cilantro can be added to taste or omitted completely, depending on your preference
Adding garlic powder or freshly minced garlic is another delicious way to prepare this rice
