This Avocado Grilled Cheese is crispy on the outside, creamy on the inside, and loaded with melty cheese! Mashed avocado, mozzarella, cheddar, and simple seasonings make this sandwich extra flavorful and satisfying. It’s an easy lunch or quick dinner that tastes like comfort food with a fresh twist.
Mash the avocado in a small bowl with a fork, then mix in the salt and pepper.
In a separate bowl, stir together the shredded mozzarella and shredded cheddar.
Spread softened butter on one side of each slice of bread, then spread mayonnaise on the unbuttered side of 2 bread slices.
Heat a skillet over medium heat and place the 2 bread slices with mayonnaise in the skillet, mayonnaise side facing up.
Spread the mashed avocado over the mayonnaise, then sprinkle with garlic powder and onion powder.
Add the cheese mixture on top of the avocado, then add fresh basil leaves if using.
Top with the remaining bread slices, buttered side facing out.
Cook for 3 to 4 minutes per side, or until the bread is golden brown and crispy and the cheese is melted. Let cool slightly, then slice and serve warm.
