Start by prepping the potatoes. Wash and dry, then chop into about 1β pieces. No need to peel the thin skin, just leave it on.
Add to a medium-sized bowl and pour on the olive oil. Sprinkle in salt and pepper.
Using a large spoon, toss potatoes in seasoning and oil to coat all sides completely.
Add seasoned potato pieces to air fryer basket and set to cook at 400 degrees for 25 minutes.
