Line the baking sheet with foil or parchment paper.
Wash the potatoes and dry them thoroughly with a paper towel.
Slice the potatoes 3/4 of the way through (so the bottoms of the slices are still connected), each slice about 1/4 inch apart from each other, so the sweet potatoes look like the ones on the photo.
Drizzle olive oil and maple syrup over the potatoes, then brush it with a pastry brush, getting the oil and maple syrup into the slices.
Put the hasselback sweet potatoes in the oven and bake for 50 minutes.
