Cut the pineapple into large chunks and discard the peel and core (see my easy instructions how to cut a pineapple).
Put pineapple chunks in a food processor fitted with a steel blade. Process for several minutes until smooth.
Squeeze the juice out of the limes into an Instant Pot. Add the pineapple puree and sugar to the Instant Pot. Close the lid and turn the valve in a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time for 10 minutes on High pressure.
When the Instant Pot is done cooking, quick release (QR) the steam.
Press the Saute button on the Instant Pot and set the time to 15 minutes. Let the pineapple jam cook, stirring periodically, until thickened (about 10 minutes).
