Spray the air fryer basket with a non-stick cooking spray.
Put bread crumbs and parmesan cheese on a plate and mix until combined.
Crack the egg in a bowl and whisk with a fork.
Dip each eggplant slice in egg on both sides, then in the breadcrumb mixture on both sides, pressing down to make sure the eggplant is evenly coated with breadcrumb mixture.
Put breaded eggplant slices in the air fryer basket in a single layer. Sprinkle the eggplant with salt, pepper and Italian seasoning.
Cook eggplant slices in the air fryer at 390F for 13 minutes, flipping them over halfway through the cooking time.
After it's done cooking, take out the air fryer basket and spread tomato sauce on top of each eggplant slice and sprinkle the eggplant with shredded mozzarella cheese.
Put the basket back in the air fryer and cook at 390F for 4 minutes.
Remove the eggplant parmesan from the air fryer with a spatula and serve.
