Heat the oil on a large non-stick frying pan over medium-high heat. Add cauliflower and cover with a lid. Cook, stirring occasionally, until cauliflower is soft (about 5 minutes).
Add eggs and shredded cheese to the cauliflower. Break the eggs up with a spatula and stir to combine. Cook, stirring ever 30 seconds, for 3 minutes, or until the eggs are set. Add salt and pepper to taste.
