Greek Quinoa Salad
This refreshing salad is sure to become a favorite! And it comes together so easily. With quinoa and tons of chopped veggies, this Greek Quinoa Salad is satisfying and delicious.

cooked quinoa

tomatoes

cucumber

red onion

parsley leaves
stems discarded

crumbled feta cheese

1/2 a lemon, juiced

olive oil

Instructions
Prep the ingredients: cook the quinoa and wash the vegetables.
Slice the tomato and remove the stem. Slice further into strips and chop into pieces. Add to a large salad bowl.
Cut cucumber in half, then cut each half into long slices. Chop into pieces and add to the bowl.
Cut stem off 1/2 of red onion and peel. Slice onion and chop into pieces. Add to salad bowl.
Chop the parsley leaves from the stems. Discard stems. Run knife through parsley leaves until chopped into small pieces. Add to the bowl.
Open can of olives and drain out liquid. Add olives to the salad bowl.
Next add crumbled feta cheese to taste. We used 2 ounces.
Squeeze the juice of half a lemon into a liquid measuring cup. Add 2 Tablespoons of olive oil and stir to combine. Pour over salad.
Sprinkle on salt and pepper to taste. Toss salad to combine ingredients. Now it's ready to serve!
Notes
Salad also delicious with a double portion of quinoa
You can peel the cucumber or leave the peel intact
Quantities of vegetables can be adjusted to taste or available ingredients
Can omit olives if that's your preference
