This delicious Spring Mix Salad is full of flavorful and nutritious vegetables. Topped a yummy balsamic dressing, this will become your go-to side salad.
First step is to wash any veggies that don't come pre-washed. Next add the spring mix to a medium-sized serving bowl.
Slice the ends off of an English cucumber and chop up into pieces.
Halve the grape tomatoes. Or if you are using large tomatoes, slice them.
Chop off the ends of the onion, then peel and slice it.
Add the cucumber, tomatoes, and onion slices to the mixing bowl.
Next it's time to make a simple dressing. Add balsamic vinegar and olive oil to a small bowl or measuring cup. Use a fork to whisk the mixture until combined. Drizzle dressing over salad.
At this point, you can add your seasonings. Then toss to coat all the veggies in the dressing and seasonings. Now it's ready to serve!
