First you need to prep the leeks for cooking. Wash thoroughly and then cut off the green top. It's inedible.
Next slice the white part in half, lengthwise. Finally chop those halves into bite-sized slices.
Heat a skillet on high heat and add olive oil and leeks. Once the oil starts sizzling, the pan is ready to sauté.
Turn heat down to medium high. Cook for 4 minutes, stirring the leeks every minute to keep them from burning.
Next you'll turn the heat down once again to medium heat. Cook for an additional 8 minutes or until leeks are soft and caramelized, stirring occasionally.
At this point, add the seasonings. Stir the vegetables to coat in seasonings.
Turn off heat and use a spatula to transfer leeks to a plate.
