This is a genius way of cooking salmon! Wrap the salmon and veggies in foil, sprinkle with Parmesan and seasoning, and grill or bake to perfection! Open up a foil packet and enjoy a complete meal - so delicious!
In a bowl, toss the green beans with oil, 1/2 tsp salt and half of the minced garlic.
Divide the green beans evenly between the foil packets and place in the center of each foil rectangle.
Rub the salmon fillets with the remaining minced garlic and sprinkle with 1/2 tsp salt and 1/4 tsp pepper.
Put each salmon fillet on top of green beans on foil.
Sprinkle the salmon with half of the Parmesan cheese.
Put the cherry tomato slices on top of the salmon.
Sprinkle the cherry tomatoes with remaining Parmesan cheese.
Put the chopped parsley on top of the tomatoes.
Put the lemon slices on top of the parsley.
Close the foil packets like an envelope (first lift the longer sides and fold them overlapping over the fish, then lift the ends and fold them up, so the foil packet is completely closed).
Put the foil packets on a baking sheet.
Put in the oven and bake for 25 minutes.
Notes
You can also grill these foil packets instead of baking. To grill, preheat the grill to Medium-High, place the foil packets on the grill and cook for 10 minutes per side.
