Put one layer of lemon slices on the bottom of a non-stick pot, then sprinkle with some sugar. Keep alternative lemon slices and sugar layers until everything is in the pot. Pour water over the lemons and sugar.
Bring the pot to simmer over medium-high heat. Reduce heat to low, cover loosely and simmer for 1 hour.
Line a baking sheet or plates with parchment paper. Carefully remove lemon slices from the pot with a slotted spoon and put on a parchment paper in a single layer. Let the candied lemon slices cool completely.
