This sweet potato marshmallow casserole is amazing! Creamy sweet potatoes topped with golden brown marshmallows that are gooey in the middle! Everyone loves this sweet potatoes casserole with marshmallows on top! This recipe is a MUST for Thanksgiving!
Preheat the oven to 350F. Grease a non-stick 9x13 baking dish.
Peel the sweet potatoes and cut into chunks. Put them in a large pot with water, bring to boil and boil until tender when pierced with a fork (about 10 minutes). Drain the sweet potatoes.
Put cooked sweet potatoes, butter, maple syrup, cinnamon and salt in a bowl and mash with a potato masher until everything is combined and smooth.
Put the sweet potato mixture in the baking dish and level the top with a back of a spoon.
Put a layer of mini marshmallows on top.
Put the sweet potato casserole in the oven and bake for 20 minutes.
Notes
If making ahead, put the mashed sweet potato mixture (without marshmallows) in a baking dish and refrigerate. Before serving, put the sweet potato dish in the oven for 30 minutes so they are warmed through, then top with marshmallows and return to oven for 20 minutes or until the marshmallows are toasted.
