This egg roll in a bowl is a perfect low-carb dinner! Ready in 15 minutes and so full of flavor! It's like the egg roll without the wrapper, also called "inside out egg rolls". Meat and veggies stir-fried and seasoned with soy sauce and spices - yummy yum yum!
Put soy sauce, sesame oil, minced garlic and ginger in the cup and stir to combine. Set aside.
Spray a large non-stick frying pan with cooking spray and heat over medium-high heat. Add ground pork and cook, stirring occasionally, for 5 minutes, or until cooked through.
Add the coleslaw mix and the sauce from a cup to the frying pan and stir to combine with the meat. Cook, stirring occasionally, for 5 minutes.
Remove from the frying pan and serve. Garnish with chopped green onions.
