If you ever had tableside guacamole at the best authentic Mexican restaurants, this version is basically a copycat.  You know those Mexican restaurants where the server wheels the whole cart to your table with the guacamole supplies – fresh avocados, tomatoes, onions, garlic, jalapeno peppers, cilantro and limes.  Then they ask you how you want your guacamole and make it right there in front of you by your table!  If you were lucky enough to have that tableside guacamole, then you know exactly what I’m talkin’ about. So now YOU will make that guacamole – super fresh and so perfect!

Authentic Mexican Guacamole Recipe

Since you are the one making that guacamole, you can customize it exactly to your taste.  Want it more spicy? Add more jalapeno! Don’t like tomatoes? Leave them out! Want it more garlicky? Add more garlic please!  Not a cilantro fan? Substitute with parsley or just leave it out! You call the shots and make your guacamole perfect for YOU!

Once you tried this freshly made authentic Mexican guacamole, you’ll never have the store-bought guacamole ever again! Avocados are not forgiving to sitting out AT ALL.  That supermarket guacamole in plastic jars has been sitting out for a while and it really shows.  Even if it’s not visibly brown (and browning can be prevented by adding a lot of lime juice and preservatives on top of it), the taste of the store-bought guacamole is far far from freshly made.  You can’t even compare.

One thing to remember when selecting your guacamole ingredients is that your guac is going to be only as good as the ingredients that go into it.  All produce you select must be top quality, especially the avocados! The avocado has to be ripe (unripe avocados will be impossible to mash and are pretty tasteless) but not overripe as overripe ones have the mushy texture and taste.  When it comes to making guacamole though, I’d say overripe is the lesser of the evils, so if unsure err on the side of more ripe then less.  Follow my exact guide on how to select a ripe avocado to pick perfect avocados at the store every time!

Avocado Guacamole

Making your own homemade guacamole is really easy.  Just peel the avocado, remove the pit, mash the avocados in a bowl with a fork, then add finely chopped tomatoes, onions, jalapeno, cilantro and minced garlic (quantities adjustable to your liking).  Season with freshly squeezed lime juice and salt to taste.  Delicious!

Best Ever Guacamole Recipe

This easy guacamole recipe makes authentic Mexican guacamole that's the best ever! I'll never make guacamole any other way!

Ingredients

  • 3 large avocados
  • 1/2 onion finely chopped
  • 1 small tomato finely chopped
  • 1/2 bunch cilantro finely chopped (leaves only, no stems)
  • 1 jalapeno finely chopped
  • 2 garlic cloves minced
  • 1/2 lime squeezed
  • Salt and pepper to taste

Instructions

  • Cut the avocados in half, scoop them out of their shell and remove and discard the pits. Put the avocado flesh in a bowl and mash with a fork or potato masher. Mash it so some small chunks still remain.
  • Add all other ingredients to the avocado and mix. Add salt and pepper to taste.
