Recipe type: Beef
Cuisine: American
Serves: 4 servings
  • 4 medium zucchini
  • 1 lb lean ground beef
  • 1 tbsp oil
  • 1 can (8 oz) tomato sauce
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 package (8 oz) shredded cheddar cheese
  1. Preheat the oven to 400F.
  2. Wash the zucchini and cut them in half lengthwise (you don't need to peel them).
  3. With a melon baller or a spoon, hollow out the zucchini, making it into a shell. Set aside the insides of the zucchini.
  4. Line the baking sheet with parchment paper and put the zucchini shells on it (hollow side on top) in a single layer.
  5. Chop the zucchini flesh (from inside the zucchinis).
  6. Heat ½ tbsp oil in a non-stick frying pan on a medium-high heat.
  7. Add the chopped zucchini flesh and cook, stirring every 1 minute, for 5 minutes. Remove zucchini from the frying pan (if there is liquid released, strain it and discard the liquid).
  8. Heat another ½ tbsp oil in the frying pan on a medium-high heat.
  9. Add the beef and cook, stirring every 1 minute, for 5 minutes, or until cooked through.
  10. Add cooked chopped zucchini, garlic, tomato sauce, ½ tsp salt, ¼ tsp pepper and mix. Remove from heat.
  11. Sprinkle the zucchini shells on a baking sheet with ½ tsp salt and ¼ tsp pepper.
  12. Divide the beef mixture evenly between the zucchini shells and stuff them.
  13. Sprinkle the shredded cheese on top of the beef mixture.
  14. Put the stuffed zucchini boats in the oven on the bottom shelf (so the cheese doesn't burn) and bake for 35 minutes.
