These Mexican Scrambled Eggs are such a yummy twist on the usual eggs for breakfast! So full of flavor with salsa, bell peppers, onions and shredded cheese! Delicious!

  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 tbsp oil
  • 6 eggs
  • ¼ cup salsa
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste
  1. Heat the oil on a non-stick frying pan over medium-high heat. Add onion and bell pepper slices and cook, stirring occasionally, for 5 minutes.
  2. Add the eggs, salsa and shredded cheese. Cook, stirring occasionally, for 2 minutes, or until the eggs are set.
  3. Add salt and pepper to taste and serve immediately.
