Recipe type: Main Dish
Cuisine: American
Serves: 4 servings
  • 1 whole chicken, bag of giblets and any plastic ties removed
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 onion, quartered
  • 1 lemon, quartered
  • 1 cup water
  • 2 tbsp olive oil (optional)
  1. Mix the salt, pepper, garlic powder, onion powder and paprika in a cup to make the seasoning.
  2. Rub the chicken with the seasoning all over.
  3. Put onion and lemon pieces in the cavity of the chicken.
  4. Pour 1 cup of water in the Instant Pot and put in the trivet. Put the chicken breast side up in the Instant Pot on a trivet.
  5. Close the lid of the Instant Pot and turn the valve to a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 25 minutes for thawed chicken (or 60 minutes for frozen chicken) on High pressure.
  6. When the Instant Pot is done cooking, allow the pressure to release naturally (NR) for 15 minutes, then quick release (QR) the remaining steam.
Optional step - browning the skin
  1. Preheat the oven to Broil.
  2. Remove the chicken from the Instant Pot into a baking dish. Brush the chicken with olive oil, then put under the broiler for 4 minutes or until browned as desired.
