These easy no-bake coconut balls are so healthy and delicious! They are gluten-free, refined sugar free, raw, vegan and taste amazing! This recipe is a must-make for coconut lovers!

  • 2¼ cups unsweetened coconut flakes, divided
  • ⅓ cup maple syrup
  • 4 tbsp coconut oil
  • 1 tsp vanilla extract
  1. Put 2 cups of coconut flakes, maple syrup, coconut oil and vanilla in a blender or food processor and process until smooth.
  2. Put the remaining ¼ cup of coconut flakes on a plate.
  3. Line another large plate with parchment paper.
  4. Roll the coconut mixture into 1-inch balls, then dip the coconut balls in coconut flakes. Put the coconut balls on parchment-paper-lined plate.
  5. Put the plate with coconut balls in a refrigerator and chill for at least one hour.
