  • 2¼ cups flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 2 tbsp poppy seeds
  • 1 cup sugar
  • ¾ cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • Zest of 1 lemon
  • ¼ cup freshly squeezed lemon juice (from 1-2 lemons)
  • 1 tsp vanilla extract
  1. Preheat the oven to 350F. Spray a non-stick 9x5 loaf pan with cooking spray.
  2. Put the eggs and sugar in a bowl and mix until combined. Add lemon juice, milk, oil and vanilla and mix until combined. Add flour, lemon zest, salt, baking powder and poppy seeds, and mix until combined.
  3. Pour the batter into the loaf pan.
  4. Put the lemon poppy seed bread in the oven and bake for 1 hour.
