Smoked Salmon Cucumber Cream Cheese Appetizer

These are so easy, you can even enlist your kids to help put them together.  Preparation and assembly takes just 10 minutes.  No cooking, no muss, no fuss. And just 4 ingredients!

These simple yet fancy Smoked Salmon and Cucumber Appetizer bites are crunchy, creamy finger food perfection.  Light and refreshing, with a classic flavor combination that everyone loves, smoked salmon always impresses!   And, these are even healthy, and low carb, low calorie, high protein and gluten free!

So, break out a pretty platter, a slicing knife, small spoon and your kitchen scissors, and you’re a few minutes away from some beautiful to behold – and eat – hors d’oeuvres.  This  Smoked Salmon and Cucumber Appetizer is always a smash hit!

If you love to host parties, but hate getting overwhelmed with complicated, messy recipes that leave you frazzled and your kitchen a mess, and take a lot of time, well, try these Smoked Salmon and Cucumber appetizers.  Your guests will thank you, and these will disappear rapidly!

Tip: Be sure to use English cucumbers in this recipe.  These are longer and thinner than the regular slicing cucumbers, and are usually wrapped in plastic rather than being waxed ( yup, more healthy for you).  They have virtually no seeds, or very tiny ones, and thinner, more tender skin than regular slicing cucumbers.  So no peeling!   English cucumbers are much sweeter than the regular slicing cucumbers, which can be bitter and have large tough seeds. They are also usually considered “burpless.”  You’re splurging on that smoked salmon, so get the best cucumbers!

If you can’t find fresh dill, you can substitute a sprinkle of freeze dried, or even some chopped chives or  thinly sliced scallions.

Tip:  I find using scissors is the quickest and easiest way to cut up the smoked salmon into bite-sized pieces to put on these savory little bites.  I like to use 2 small spoons to dollop little dabs of cream cheese onto each cucumber slice, instead of spreading it onto each slice.

Ingredients

  • 1 English cucumber sliced
  • 4 oz smoked salmon
  • 4 oz cream cheese
  • Fresh dill for garnish optional

Instructions

  • Slice the English cucumber into rounds and put on a sheet of paper towel. Cover with another sheet of paper towel and press down with your hands to help absorb the moisture from the top. Leave the cucumbers on a paper towel for 5 minutes.
  • Transfer the cucumber slices to a serving platter and discard the paper towels.
  • Cut the smoked salmon into pieces that are approximately sized like cucumber slices (using scissors to cut salmon makes it super easy).
  • Spread the cucumber slices with cream cheese and top with smoked salmon slices.
  • Add a spig of fresh dill on top of each cucumber slice (if desired).

Notes

If making ahead, cover with plastic wrap and refrigerate for up to 24 hours.
