How to make Mexican scrambled eggs

These Mexican scrambled eggs have an orange tint to them from the salsa and the flavor of salsa and melted cheddar cheese throughout, and bell peppers and onions fit right in! If you are a Chipotle fan, you know their grilled peppers and onions.  I often make a huge batch and add it to many recipes, including scrambled eggs (I even have the Instant Pot peppers and onions version).

Easy Mexican Scrambled Eggs Omelette

Making Mexican scrambled eggs in really easy.  Just pan-fry sliced bell pepper and sliced onion in a little oil, then add the eggs, salsa and shredded cheese.  Cook, stirring, for 2 minutes, or until the eggs are just set.  Add salt and pepper to taste and your favorite seasonings and enjoy!

Instructions

  • Heat the oil on a non-stick frying pan over medium-high heat. Add onion and bell pepper slices and cook, stirring occasionally, for 5 minutes.
