Homemade Blueberry Pancake Syrup Recipe

The fact that people don’t commonly make their own pancake syrup from scratch doesn’t mean it’s difficult to do so.  In fact, homemade blueberry syrup is one of the easiest recipes you could find!  This particular blueberry syrup recipe uses just 3 ingredients: water, sugar and blueberries.  All you need to do to make syrup is combine these three ingredients in a small pot and boil for 15 minutes – that’s all there is to it!

I came across this blueberry syrup recipe by accident.  I cook almost every day for my family, but it was my first time making blueberry syrup.  We always have maple syrup with our pancakes, so I just never felt a need for any other syrup, let alone making the syrup myself.  Until one weekend I wanted to make pancakes for breakfast, got the whole family excited about the pancakes and then realized that we were out of maple syrup :)  I didn’t want to let everyone down by not having pancakes, so I thought – is there a way I can make a pancake syrup myself?  I had a bag of frozen blueberries in the freezer, and that’s how the idea for the homemade blueberry pancake syrup was born.  Water and sugar boiled together turn into sugary syrup when some of the water evaporates, and when you add blueberries to the mix, it turns into blueberry syrup!

How To Make Bluberry Syrup Recipe

You can use fresh or frozen blueberries – it really doesn’t matter which ones you will use because they’ll be cooked in a boiling water.  My favorite part of this blueberry syrup are the actual whole blueberries – it is so exciting to have real blueberries in a real blueberry syrup on top of pancakes on your plate!  And to have a true blueberry fix, pour it over homemade blueberry pancakes!  This pancake feast with a cup of coffee – doesn’t get any better than that!

Homemade Blueberry Pancake Syrup Recipe

You can store the leftover syrup, covered, in a refrigerator for up to a week.  If the syrup gets too thick, you can thin it by adding a little water and stirring.  You can warm it in a microwave or simply serve cold.  This homemade blueberry syrup is not limited to just pancakes – you can serve it with waffles, french toast, or as a sweetener for smoothies, tea or cocktails!  Blueberry syrup also tastes amazing served over ice cream!

    I loved blueberry syrup as a kid, what a great idea to make it at home! And I have totally been in the situation of running out of syrup, it is such a bummer – but being able to whip up this syrup would make it all better. Looks perfect, Melanie!

    1. Absolutely! If you look at the ingredient label of store-bought blueberry syrup, it’s frightening how many chemical additives are there. Homemade is so much better – you know exactly what ingredients go into it, and it’s so much tastier too, and it has real blueberries!

    I’m one for just grabbing the maple syrup out of the fridge too when it comes to something to put on pancakes, or something different from honey to go on my porridge at the weekend.

  4. Gah! This is perfect for our home. My husband is a syrup monster (as in, would you like pancakes with your syrup,sir?) and it drives me crazy as how fast we run out — especially since I like to bake with it. We always keep frozen blueberries in the freezer, so I’m totally making this for him.

  7. I love the look of your pancakes! I’ve never made blueberry syrup but now I know I must try this. When I was growing up my mother used to make us blueberry pancakes from a recipe a friend in the US had given her – they were the best!     1. Happy New Year to you too, Monica! The secret to evenly browned pancakes is the pancake griddle! My pancakes get burned quite often on a regular frying pan, but are always perfect on a griddle – it really makes a huge difference!
