This tasty and easy to make dinner has 2 ingredient slow cooker chicken stew as the main dish, roasted small potatoes for the side dish and roasted broccoli for the vegetable.  There is very little work involved in making this dinner – the chicken is cooked in a slow cooker, and the potatoes and broccoli are baked in the oven.  Just set your timer and take everything out when it beeps to be served for dinner!

I love making roasted small potatoes even more than regular big potatoes because you don’t need to peel the small potatoes!  The small new potatoes have a very thin delicate skin that’s edible, and no peeling means less work for a lazy cook :)  Just halve the small potatoes and toss them in oil, then throw in the oven and they’ll get yummy, roasted and brown!  See my roasted small potatoes recipe.
