Russian Sweet Bell Peppers And Onions Recipe

This is a Russian recipe of an appetizer made with sauteed bell peppers and onions.  It tastes best when served cold.

Ingredients For Russian Sweet Bell Peppers And Onions Recipe:

5 bell peppers
3 onions
3 tbsp oil
1/2 cup ketchup
1 tsp salt
4 tsp sugar
2 tsp garlic powder
1 tbsp vinegar
1 can (14 oz) of chopped tomatoes

Directions For Russian Sweet Bell Peppers And Onions Recipe:

Slice the onions.

Heat the oil in a large non-stick frying pan over medium-high heat.  Add the onions, stir, and cook, stirring periodically, for 5 minutes.

While the onions are cooking, slice the bell peppers (cut them in half, scoop out the seeds with a spoon and discard the seeds, then slice the peppers).  Add bell peppers to the frying pan and cook, stirring periodically, for 5 minutes.

Mix ketchup, salt, garlic powder, sugar and vinegar and add to the peppers and onions.  Add chopped tomatoes and stir.  Reduce heat to low, cover and simmer for 15 minutes.

Serve cold.

Shrimp Fried Rice Recipe

Ingredients For Shrimp Fried Rice:

3 cups of cooked rice
1 lb of cooked shrimp (thawed)
1 bag of Oriental chopped vegetables (cooked in a microwave according to package directions)
4 tbsp oil
4 tbsp soy sauce
1 egg

Directions For Shrimp Fried Rice Recipe:

Heat the oil in a large non-stick frying pan over medium-high heat.  Add rice and stir until all grains are coated with oil.

Push the rice to the sides of the frying pan and reduce heat to low.  Break the egg into a center of a frying pan.  Quickly stir the rice and egg together, so the rice is coated with egg.

Drizzle the soy sauce over rice, and stir so the rice is coated with soy sauce.

Add shrimp and veggies.  Increase heat to medium-high, and stir until combined.  Add extra soy sauce and pepper to taste if needed.

How To Thaw Frozen Shrimp Fast

Have you decided in the last minute to make a shrimp recipe for dinner?  Need to defrost the shimp right away?  Here’s the fast way to thaw frozen shrimp.

Put frozen shrimp in a colander.  Put colander in a large bowl.  Put the bowl with the colander in a sink, and fill it with cold water.  Leave for 10 minutes.

Lift the colander with the shrimp out of the bowl.   Run the cold water through the shrimp, and move the shrimp around with your hands while the water is running.  This will thaw the last remaining pieces of ice, and the shrimp will be completely defrosted and ready to go.

How To Cook Perfect Rice In A Rice Cooker

The laziest way to cook perfect rice is to use a rice cooker!  Put rice, water and salt in a rice cooker, press the button and walk away :)  Rice cooker will do all the work in cooking the perfect rice for you.

The Ratio Of Rice And Water In A Rice Cooker

For white rice in a rice cooker, I always use the ratio of 1 cup of rice to 1.5 cups of water.

The rice cooker manual has different ratios depending on the rice type, but I hate reading manuals and just remember the ratio that always worked for me :)

How Much Salt In Rice?

I use 1/4 tsp of salt per 1 cup of uncooked rice.

I usually cook 2 cups of dry rice at a time:

Using my ratio of rice to water in a rice cooker, I add 3 cups of water:

Then I add 1/2 tsp of salt to a rice cooker, and press the “Cook” button:

When the rice cooker beeps, the rice is ready!  You don’t even have to take it out right away – the rice cooker will keep your rice warm for you for hours!

Chicken Fajitas Recipe

Chicken Fajitas Ingredients:

Cooked chicken meat
Onion
Avocado
Flour tortillas

Directions how to make chicken fajitas:

1. Thinly slice cooked chicken (I use the slicing blade of the food processor, so it only takes a few seconds to create very thin chicken slices).

Here’s the picture I took of sliced chicken breast for the fajitas:

2. Mash the avocado with a fork, and add salt to taste.

3. Thinly slice the onion (you can use the food processor again).

4. Warm the tortillas in the microwave

5. Assemble the chicken fajitas by putting chicken, onion and avocado in the tortilla.  Fold the tortilla and eat!

Chicken Salad Sandwich Recipe

This is a great way to use leftover chicken.  Whenever we have roast chicken for dinner, the next day it’s time for chicken salad sandwiches for lunch!

Ingredients:

Cooked chicken meat, chopped
Boiled egg, mashed with a fork
Pickles, chopped
Mayo, to taste
Bread (2 slices)

Directions:

Mix chicken, egg, pickles and mayo.  Spread on the slice of bread.  Top with another slice.
