Salmon Fishcakes Recipe

Ingredients:

1 lb salmon fillets
1 egg
1 onion, minced
2 tbsp flour
3/4 tsp salt
1/4 tsp pepper
1 tbsp oil

Directions:

Grind the salmon in the food processor.  Mix with minced onion, egg, flour, salt and pepper until combined.

Heat some oil in the non-stick frying pan over medium-high heat.  Form the salmon mixture into patties and put on a frying pan.  Cook for 7 minutes, then flip the patties and cook for another 7 minutes (until cooked through).

Serve with cocktail sauce (a.k.a “shrimp sauce”) for dipping.

Lemon Bars Recipe

These lemon bars have intense lemon flavor and are perfect for lemon dessert lovers!

Ingredients:

For The Crust

1 cup flour
1 stick butter, softened
1/4 cup powdered sugar

For The Filling

5 eggs
1 1/2 cup sugar
3/4 cup lemon juice
1/2 cup flour
3/4 tsp baking powder

Directions on how to make lemon bars:

Make The Crust

Preheat oven to 350 F.

Line the 8″ square baking dish with th parchment paper. 

In the food processor, combine flour, butter and powdered sugar.   Put all the mixture in the baking dish, and spread evenly and press into the bottom of the dish to form a crust. 

Bake for 15 minutes, then remove from the oven.

Make The Filling

Combine eggs and sugar, then mix in the lemon juice.  Add flour and baking powder and stir until combined. 

Pour the filling on top of the crust.  Bake for 25 minutes.

Let it cool down, then refrigerate until cold.  Remove from the refrigerator, cut into bars and sprinkle with powdered sugar.

Double Chocolate Cookies With White Chocolate Chips

Ingredients:

2 cups flour
1 tsp baking powder
2 sticks butter, softened
1 1/2 cup sugar
1/3 cup cocoa powder
2 eggs
1 tbsp vanilla
2 cups white chocolate chips
1 cup chopped walnuts

Directions:

Preheat oven to 375 F.

Cream together butter and sugar.  Add eggs and vanilla and mix until combined.

Add flour, baking powder and cocoa powder and stir until combined.

Add chocolate chips and nuts and stir until combined.

Line the baking sheet with parchment paper.  Drop the cookie batter by a tablespoon on a baking sheet, spacing the cookies at least 1 inch apart.

Bake for 10 minutes.  The cookies will look undercooked, but take them out.  After they cool down, they’ll be just right :)

Oven-Roasted Potatoes Recipe

oven roasted potatoes
Ingredients:

Potatoes
Olive Oil
Salt
Pepper
Dried Herbs

Directions:

Preheat oven to 400F.

Peel the potatoes and cut into quarters.  Put potatoes in a bowl and pour a little oil over them.  With your hands, spread the oil all over the potatoes, so all the potatoes are coated with oil.

Put potatoes on a non-stick baking sheet and sprinkle with salt, pepper and herbs.  Put in the oven and bake for 45 minutes, or until the potatoes are tender when pierced with the fork.

Vegetarian Fried Rice Recipe

vegetarian fried rice

Ingredients:

2 cups of cooked rice
1 shredded carrot
2 cups of chopped vegetables
1 egg
2 tbsp soy sauce
2 tbsp oil

Directions:

Heat 1 tbsp of oil in a non-stick frying pan over medium-high heat.  Add the shredded carrot and chopped vegetables.  Cook, stirring periodically, for 5 minutes or until tender.

Add another 1 tbsp of oil to the frying pan.  Add cooked rice and stir so it’s mixed with oil and vegetables.

Add a raw egg, then stir very fast so all the rice is coated with egg. 

Drizzle with the soy sauce.  Keep stirring for 2 minutes.

Note: for a vegan version, just omit the eggs.

Baba Ghanough Recipe


Ingredients For Baba Ghanough Recipe:

2 large eggplants
2 garlic cloves
4 tbsp tahini
Juice from 1 lemon
1/4 tsp salt

Directions On How To Make Baba Ghanough At Home:

Preheat oven to 425F.  Prick the eggplants in several spots with a knife (so they don’t explode in the oven).  Put the eggplants on a baking sheet and bake for 30 minutes, or until very soft.

Remove the eggplants from the oven.  Wait till they are cool enough to handle (I just run cold water over them to speed up the process).  Cut the eggplants in half lenghwise.  Scoop the flesh out with a fork and put in a bowl.  Discard the skin.

Chop the eggplant flesh and put in a fine-mesh colander.  Put the colander over a sink, and press on the eggplant with your hands to squeeze the juices out.

Put eggplant, tahini, lemon juice, garlic and salt in a food processor.  Process until smooth. 

Serve baba ghanough with warmed pita bread for dipping.

How To Cut A Pineapple

How many times have you let a pineapple spoil because you were too lazy to cut it? ;)

No more struggling – it’s easy to cut a pineapple if you do it the right way!

Step 1:

Cut off the green top.

Step 2:

Cut the pineapple in half lenghwise.

Step 3:

Halve each piece lengthwise.

Step 4:

Halve each piece lengthwise again.

Step 5:

Cut out and discard the tough core from each slice (on the picture below, the core is on the right side).

Step 6:

Cut off and discard the outer skin from each slice.

 

Step 7:

Cut each slice into chunks.

You are done!  Enjoy your pineapple :)

Hawaiian Pizza Recipe


Ingredients:

Pizza Crust
Pineapple, chopped (or use canned pineapple chunks) 
Onion, sliced
Tomato sauce
Shredded Cheese

Directions:

Preheat oven to 425F.

Spread the pizza crust with tomato sauce.  Put onion slices and pineapple chunks on top.  Sprinkle with shredded cheese.

Bake for 20 minutes, or until cheese has melted.

Homemade Tomato Sauce Recipe

Ingredients:

2 lbs fresh tomatoes (or 28 oz can whole tomatoes with juice)
4 garlic cloves, minced
1 small onion, finely chopped
1 tbsp dried basil (you can also use oregano instead) or 1 bunch fresh
2 tbsp oil
salt and pepper to taste

Directions

If using fresh tomatoes, peel them.

Chop the tomatoes.

Heat the oil in a non-stick frying pan over medium-high heat.  Add the onions and cook, stirring periodically, for 5 minutes.

Add the chopped tomatoes and their juice.  Stir, reduce heat to low, cover and simmer for 15 minutes.

Add garlic and basil.  Stir, cover and simmer for 5 more minutes.  Add salt and pepper to taste.

If the sauce is too chunky, you can process it in the food processor.

Meatballs Recipe

 
These are the most tender and juicy meatballs I’ve ever tasted!

Ingredients:
1 lb ground meat (beef or turkey)
1 onion, minced
1/4 cup bread crumbs
3 tbsp water
1/2 tsp salt
1/4 tsp ground pepper
1 tbsp oil
1 jar (26 oz) pasta sauce

Directions:

In a bowl, combine the ground meat, minced onion, bread crumbs, water, salt and pepper.

Heat the oil in a large non-stick pan over medium-high heat. Form the meat mixture into balls and put them on a frying pan. Cook for 3 minutes, then turn the meatballs over with a spatula and cook for another 3 minutes.

Pour the pasta sauce over the meatballs. Reduce the heat to low, cover and cook for 30 minutes.
